February days are now gone and March has officially kicked in. I finally purchased a new monthly focus board. We ventured out for a day date which included a movie. I love our day dates. I will give my honest review about the movie for those interested. I wanted to see this movie as it was based on a true story. I did enjoy the movie but oh my, it was a tear jerker from the get go! It ended good but mercy! Let's just say that I am thankful that no one was sitting close enough to see my tear stained face. I am glad that I saw it but I am good for a while on sad movies, even if they do end good! My oldest daughter, her husband and their son participated in the Spartan race which is a series of obstacle courses that challenge. They done so well. As you can see from the pictures it gets pretty muddy! My three daughters participate each year in the Gate River Run. I love it that they do this together. They have so much support & encouragement from all the onlookers. I am just
Hope you all are having a great week. Wanted to share a Mexican salad with you this week. I actually made a Mexican dinner for a sweet family and of course had plenty to keep.
Now let me tell you up front that if you do not like cabbage you will NOT like this. I love Cabbage and any way you cook or fix it!
2 heads of cabbage washed and drained. Then core your cabbage and dice in strips thinly. Put the cabbage in a bowl and set aside. (this recipe can be adjusted to how many you will want to feed)
2 small cans or 1 large can of black sliced olives drained. (set aside)
1 small bag of medium size radishes washed and sliced.
I used around 4 of the green onions. Washed, drained and diced...onion and green part.
I snipped just a tad of parsley, onion grass, and basil from my little herb garden and washed it and diced it up.
Take all the ingredients above and mix in a large bowl. I sprinkled 2 tsp. of kosher salt and 1 tsp. of black pepper on the salad mixture and mixed in well. Then I added 2 tsp. of dill weed. I used my trusty bottle of McCormick's but I have some fresh dill growing! Sprinkle that in the salad mixture and give it a toss.
Next, take 1 1/2 cups of red wine vinegar or seasoned rice vinegar (which I love to use) and 1 cup of olive oil. ( I use extra virgin olive oil) Mix together with a wisk. Add 1/2 cup of sugar and wisk together. Taste to see if you need more sugar, vinegar or oil. Your taste buds will tell you what you like. I added more sugar! (LOL!) Mix well and toss really good into your cabbage mixture. If it taste to dry for you then mix up a little more of your oil/vinegar combination and toss again.
This recipe actually made 4 of these 8x8 size pans full. Cover and chill in frig. If you want too sprinkle a little shredded cheese on top before serving.
I also made a Mexican casserole, Mexican cornbread and even Mexican cookies! All I needed was a sombrero!
Now GUESS WHAT?
