{March is well under way}

February days are now gone and March has officially kicked in.   I finally purchased a new monthly focus board.  We ventured out for a day date which included a movie. I love our day dates. I will give my honest review about the movie for those interested. I wanted to see this movie as it was based on a true story. I did enjoy the movie but oh my, it was a tear jerker from the get go! It ended good but mercy! Let's just say that I am thankful that no one was sitting close enough to see my tear stained face. I am glad that I saw it but I am good for a while on sad movies, even if they do end good!   My oldest daughter, her husband and their son participated in the Spartan race which is a series of obstacle courses that challenge. They done so well. As you can see from the pictures it gets pretty muddy!  My three daughters participate each year in the Gate River Run. I love it that they do this together. They have so much support & encouragement from all the onlookers. I am just

Fish Dish and Fresh Bread




I want to show you a quick and easy fish dish to make on the grill along with fresh wholesome bread. VERY GOOD!

In my hometown we have a Smart Market owned and operated by some of our locals. Needless to say you can get all sorts of goodies there but they also have fresh seafood. I purchased two pieces of mahi mahi. They were nice size fillets. I seasoned them with Old Bay seasoning, tossed a few sliced lemons on them and sat aside. 


I had some potatoes so washed a few and sliced them up. I also had a frozen pack of veggies (carrots, cauliflower and broccoli). Thawed them out and sat aside.


So then I decided since I had plenty of time I would make a fresh loaf of wholesome bread; recipe from my friend Johnna Duke. I picked a little parsley, dill and a pinch of rosemary from my herb garden. I washed it, dried and then diced it up. Grabbed a few jalapenos from the frig. Can't wait for my jalapenos in my garden  to get ready. I make the best poppers EVER!  Dice up the jalapenos and set aside. 


Then I made my bread. Recipe at the bottom of post.


Mixed up my herbs and jalapenos in my bread mixture. Shredded cheese is good in the bread too (which I did not use for this batch) or whatever type of herbs you want to use. You can use about anything you want too in this basic bread recipe.



First 30 minutes of bread rising in oiled based bowl with dishtowel over it.


After the first 30 minutes I then place on cookie sheet lined with parchment paper and wrap a piece of plastic wrap over the top and let it rise another 30 minutes.


Bake and ooh...I bet you can smell my fresh baked bread can't you?


Next I took some dill, lemon basil and a sprig of rosemary and after washing it and patting it dry with a paper towel I diced it up for my dipping sauce for my baked bread.


Put your herbs in a bowl and add extra virgin olive oil and rice vinegar and give it a whisk. I also like red wine vinegar but LOVE using rice vinegar with Ramen Noodle salad. Another recipe for another day! I didn't measure the oil and vinegar. I would start out with equal parts of each. You can always add more of each if you don't like the taste. 


 So good on fresh baked bread!



Had some corn on the cob so boiled a couple of pieces of corn. Grabbed a banana pepper from the garden and supper was done. Matter of fact we had leftovers the next night!

Recipe for fish and veggies. (You can use any kind of fish you like) 

Line your cookie sheet with foil and sprinkle some olive oil on the foil. Place your fish in the middle. Potatoes went on one side and other veggies on the other side. Sliced a lemon and placed it on my fish and veggies. I drizzled a little olive oil over the fish and veggies, gave the veggies a dash of Nature's Seasoning and a dash of Old Bay. Covered with foil and pinched the sides of the foil good and tight so all the steam stays inside from cooking. 

Cooked on gas grill on low for about 17-20 minutes. Let it rest a minute before diving into it! (Cooking time depends on the thickness of your fish and potatoes)
  
Basic Bread Recipe: 
2 1/2 cups of All Purpose Flour (I've used King Arthur and Gold Medal)
1 tsp. of Himalayan Sea Salt (fine ground) I have also used Natural Sea Salt too.
2 packs of Rapid Rise Instant Yeast (recipe calls for 2 1/2 tsp.) but I use 2 packs.
1 1/4 cup of warm water.
1 tsp of Olive Oil (you can use more if you like up to a tablespoon) .
Mix dry ingredients together and then add water and mix. Add your oil and mix. If it is too wet add a little more flour and if too dry add a little more water. (You don't want it sticking to your fingers) and if is too wet it will not form into a ball. Kneed for a few moments. Shape into a ball and place dough in a bowl that you have lightly greased with your olive oil. Cover with dishtowel and let it rise for 30 minutes.  Now it's time for the 2nd rise. Take the dough out of the bowl being careful not to tear it. Shape into another ball and as you shape....tuck the edges under all the way around. (wish I could show you this process) Now place it on a cookie sheet that you have lined with parchment paper and place a piece of plastic wrap over it. Let it rise another 30 minutes. Preheat over to 450.

Once dough has doubled in size bake for 10 minutes. Turn your oven down to 350 and bake another 20-25 minutes. My oven only takes about 20 minutes so I would begin to watch as it browns and take note. Take out and let cool before cutting. You can dip it in your dipping sauce or spread a little butter on it. This bread has no preservatives and is all natural ingredients. It will last about a week in the frig. However, it NEVER last a week at my house!

Added some pretty lilies, gardenias and wild fern from my back yard to the setting and Wala!

    I love the baked bread too. I've been baking gluten free bread for me since I've had some troubles with regular flour. But I could do this one for my family. They would love it. Thanks for sharing.

Hiding the Ugly Hot Water Heater

 I shared that I wanted to hide my ugly hot water heater in my laundry room with you a few weeks ago. It just stuck out like a sore thumb. But after all it is a hot water heater right? So my man took a piece of wood (not real wood) but it worked and built a frame for me. So now to see if it would fit and it did. I painted it white and did not like the texture it had even after two coats of white. (rule of thumb...you get what you pay for and the wood was cheap) But I wasn't going to let it whip me!  Found some contact paper at Walmart in the gray and white. Covered the front with the contact paper and loved the look. The top was covered with a piece of painted wood as well and worked perfect to place this on top... And this.... Added a clothes basket in the corner and here was the top.... Yep, no longer an eye sore to me! Went perfect with my gray walls and gray and white floor. Remember the wood tray I bought at a yard

{Another Fun Filled Weekend}

I hope you all are doing well. I am trying to wind down for the night and thought I would try and get a post out. Girls, by this time I am in my fat clothes and recliner smashing that remote control!   Marty and I kicked off our weekend by having a little fun food as I call it,  "charcuterie" style out by the pond. Of course I always fix more than we need or eat but it sure was good.  Two of our granddaughters had dance recitals over the weekend so we got to watch them perform and oh my! They were just the cutest things ever.  We were blessed to be able to see them perform. Then we celebrated a birthday for this sweet grandgirl! She was excited about being double digits . And besides all the fun from the weekend I was able to see some of my pretties in bloom.  Now to enjoy a cup of coffee.... {Happy 46th Wedding Anniversary To Us}

  Happy October everyone! I wanted to pop in today and share a few pictures. Marty and I celebrated our 46th wedding anniversary on September 23.  Oh it seems so long ago that we said "I Do". We started dating when I was 16. Married at 18 and began a family at 20. Needless to say we have surely grown up together. Praise the Lord that we are growing "Older" together.  We decided since it had been about 8-9 years since we had been to Savannah, Ga. that we would take a weekend there and just enjoy a scenic luncheon cruise.  We enjoyed walking River street and sightseeing, shopping and eating of course! It was a nice get away and perfect for us as we are simply two imperfect people that fit perfectly together.  I did spot Santa while in Savannah though! YES, I love Christmas so I had to stop at several Christmas shops! We've had outings that have kept us quite busy and we have surely been blessed to be able to attend our grands functions and our little outings toget
