Well, it's not HOT in my neck of the woods in temperature (not today anyway) but it's sure been a HOT minute since I last posted. For that I am so sorry but it seems my life has been consumed with doctor appointments, tests, and MORE tests, biopsies, surgery and so much more. One day at a time sweet Jesus is all that any of us can ask for. Wanted to pop in on this beautiful Sunday afternoon to share a little about what I've been up too. Marty and I enjoyed a weekend at the beach before I had breast cancer surgery and took advantage of the time I had in between so many doctor appointments and testing. It was sure a good little getaway. We celebrated our 47th wedding anniversary in September. WOW! Just babies! LOL! We were high school sweethearts. Started dating at age 16. Married at age 18 and started a family at age 20. We celebrated Marty's birthday in October. He says that he's feeling his age these days. LOL! He still works 4 days a week and has a long commu
YUM....yes I think I would like one of those please.....Who doesn't like chocolate covered strawberries or a piece of milk chocolate candy?
My granddaughter Mallory Grace just turned 12 years old and she asked me to bake her birthday cake. Just something simple....Chocolate cake with chocolate icing and chocolate covered strawberries. Ladies, how can a Nana turn that down?
Her wish came true.... Best chocolate icing recipe ever! I will place recipe at the bottom.
She's a gal after my own heart. She's a Jesus loving girl that enjoys hunting, travel ball, dressing up, makeup, jewelry and well, she loves about everything. My well rounded girl for sure.
My FAVORITE grandson...yes, he's my only grandson, plays basketball. Well, he likes all sports and one doesn't end before he's playing another sport. We sure enjoy watching him play whatever sport he's in.
And, I took some time out for ME! A beautiful sun set sitting in a tree stand in the pines of Georgia caught my eye one afternoon. I was reminded of God's promise...

Recipe for Chocolate Frosting
- 1 cup unsalted butter softened (I used sweet butter) YES, I surely did!
- 3 cups powdered sugar sifted
- 2/3 cup cocoa powder sifted
- 1 1/2 teaspoons vanilla extract
- 1/8 teaspoon kosher salt
- 1/4 cup heavy cream
- DIRECTIONS:
- Place softened butter and 1 cup powdered sugar in a large bowl (or in the bowl of an electric stand mixer) Using the whisk attachment, mix until combined, scrape the bowl, and repeat with remaining sugar, adding it 1 cup at a time. When all sugar has been added, turn speed to medium-high and whip about 5 minutes, until pale and fluffy, scraping the bowl as needed.
- Add the cocoa powder, vanilla, and salt, and blend on low for 1 minute. Add heavy cream in a slow drizzle as it mixes.
- Once the mixture is mostly combined, turn off the mixer and scrape down the sides and bottom of the bowl.
- Whip buttercream on medium-high speed for 4-5 minutes, until it is silky, light, and fluffy.
Note: This recipe yields approximately 2.5-3 cups of frosting, enough to pipe on 16-18 cupcakes or fill and ice a 3-layer 6-inch cake.
