{It's Been A Hot Minute Y'all}

  Well, it's not HOT in my neck of the woods in temperature (not today anyway) but it's sure been a HOT minute since I last posted. For that I am so sorry but it seems my life has been consumed with doctor appointments, tests, and MORE tests, biopsies, surgery and so much more. One day at a time sweet Jesus is all that any of us can ask for. Wanted to pop in on this beautiful Sunday afternoon to share a little about what I've been up too.  Marty and I enjoyed a weekend at the beach before I had breast cancer surgery and took advantage of the time I had in between so many doctor appointments and testing. It was sure a good little getaway.  We celebrated our 47th wedding anniversary in September. WOW! Just babies! LOL! We were high school sweethearts. Started dating at age 16. Married at age 18 and started a family at age 20.  We celebrated Marty's birthday in October. He says that he's feeling his age these days. LOL! He still works 4 days a week and has a long commu...

{Family and Pie-Oh My!}


Well, I sorta got on a pie baking frenzy and baked two pies for Sunday dinner. But in the midst of baking, we had a bonfire, made S'mores with the grands, fried venison with french fries, rode the 4-wheeler, done a little fishing and told stories around the fire. GHOST stories at that! LOL!

Yep, one of the grands is practicing yoga on a slanted log aiming right towards the pond! And, another grand talked her papa into carrying her to the store and of course she came back with a doll.


 Life in the country is NEVER boring I can assure you.

 Sunday after dinner there was more fun! Who has time for NAPS on Sunday? Now, how about a pie?


Blueberry Sour Cream Streusel Pie 

I have some fresh blueberries that a sweet friend gave to me in my freezer and decided to use some and make a pie. I also had pie crusts in the freezer so why not?  

 Preheat oven to 400 degrees
One unbaked pie crust
1 cup of sour cream
3/4 cup of sugar
1 egg
2 tablespoons of all-purpose flour
2 teaspoons vanilla flavoring
1/4 teaspoon of salt
1 1/2 half cups of fresh blueberries  
Mix in the order of the ingredients except leave out 1/2 cup of blueberries.
Pour into the pie shell and then top with remaining blueberries. 
Pop your pie into the oven and set the timer for 25 minutes. While baking, make your streusel topping.  

Streusel Topping
 1/2 cup of brown sugar
1/3 cup of all-purpose flour
1/4 cup of butter, softened
1/2 cup of chopped pecans
Mix together and set aside. 
After pie has baked for 25 minutes take it out of the oven and cover the top with your streusel. Pop it back into the oven for another 20-25 minutes. Remove and let stand for about 20 minutes. Serve warm or at room temp. Serve with vanilla ice cream or whipped cream. OR BOTH! 
I have a friend that said calories do not count on Sundays


My family said said it was delicious!

  4. Oh what a wonderful time you all had together! I love that your grands are so close and can come over and enjoy such fun times with you. You are truly blessed! I love your pond too! And s'mores/bonfire! Oh my! What a treat!! Now that pie looks yummy! I may have to try that one. Sounds simple and delicious! Yes, Embrace the joy of each day while you can!!   13. Oh yes...always fun to be had esp with kids around. THAT PIE...oh my gosh, that looks AMAZING. Crap, now I want a pie. I have got to start putting distance between me and SUGAR. I have been packing but I actually start out doing some cleaning that I need to do but then I jump over to boxing things up for my move. Now I am on the blog, I need to learn to focus.

Hiding the Ugly Hot Water Heater

 I shared that I wanted to hide my ugly hot water heater in my laundry room with you a few weeks ago. It just stuck out like a sore thumb. But after all it is a hot water heater right? So my man took a piece of wood (not real wood) but it worked and built a frame for me. So now to see if it would fit and it did. Don't you just love sunflowers? When I think about sunflowers I think of two things. My motherinlove who loved sunflowers and Fall. I came across a devotional written by Julia Bettencourt on sunflowers and thought it so appropriate for today as I wanted to share my sunflowers with you.
