Happy May! I wanted to pop in and share a few pictures from my month of April which seemed to fly by quickly. As I am trying to catch up with my blogging friends today I realized it had been a month since I last posted. My mercy! But, I am so busy doing this thing we call life here on earth and enjoying every moment that I can. With my immediate family of 14 there is never a dull moment y'all! We had three family birthdays in April. My SIL David, granddaughter Adalynn and oldest granddaughter Raygen. Our favorite grandson Conner (only grandson) carried his girl to the prom. We had to snap at least one picture with Mom and Nana! Two of my elementary school friends and I get together at least once every 4-5 weeks so we went to breakfast and then to Cummer Museum of Art & Gardens. We always have so much fun. The gardens are so beautiful that I couldn't even attempt to snap all the pictures I wanted. There are so many beautiful paintings to look at this but this was one of

Okay friends...let me say that I am not a big sweet eater (I'm one of those gals that rather have fried chicken, mustard greens and corn bread) HOWEVER these little MINI PIES I do like love.
Recipe and tutorial for you...
Oreo Peanut Butter Mini Pies:
Ingredients:
Take some Oreo cookies and toss in a zip lock bag. Sorry, I didn't count them but if you don't have enough you can add more. I used a potato masher to crush my cookies with but you can use whatever you have that works for you such as bottom of heavy glass or etc.
Sprinkle cookie mixture onto the dough.
A closer look....(I made two batches) Next batch I make I will crush the cookies a little finer but still have some chunks.
Next take a teaspoon and just dollop out some peanut butter and place on top of Oreo cookies.
Well maybe I used more than just a dollop. LOL!
Take remaining dough and cut into strips.Now If I had of had the time I would have cut into thinner strips and made it look more like a lattice look...but I didn't! Lay your strips over the peanut butter and pinch the ends to the pie.
Melt some butter in microwave and brush butter over your mini pies.
Nothing like having your very own mini pie! Ya can't go wrong with cookies and peanut butter... RIGHT?
I placed some in the frig and when I wanted one I just simply zapped it in microwave for about 30-45 seconds and WA-LA! Good cold too! I love the little bit of chocolate with peanut butter but the flakiness of the pie part is what makes it too me.
Give them a try....BET YOU CAN'T EAT JUST ONE!

Oreo cookies
Peanut Butter
Melted butter or margarine
Okay we are talking about 4 ingredients: Pie crust, Oreo cookies, Peanut butter and Butter! COME ON NOW....Could this be any easier?
I wanted to make mini bites so used my mini muffin pan. Spray well with Pam.

I used my little biscuit cutter but you can use the mouth of a glass as well. This biscuit cutter is a 2 inch round.
Lay your dough out on the counter or large cutting board and cut with your biscuit cutter. Lay cut dough in your pan. I found that this size cutter makes a perfect little pie shape size for the mini muffin pan.

Bake in preheated oven on 350 for about 15 minutes.
Let cool for a few minutes and get ready.......THEY ARE SO GOOD!
