{It's Been A Hot Minute Y'all}

  Well, it's not HOT in my neck of the woods in temperature (not today anyway) but it's sure been a HOT minute since I last posted. For that I am so sorry but it seems my life has been consumed with doctor appointments, tests, and MORE tests, biopsies, surgery and so much more. One day at a time sweet Jesus is all that any of us can ask for. Wanted to pop in on this beautiful Sunday afternoon to share a little about what I've been up too.  Marty and I enjoyed a weekend at the beach before I had breast cancer surgery and took advantage of the time I had in between so many doctor appointments and testing. It was sure a good little getaway.  We celebrated our 47th wedding anniversary in September. WOW! Just babies! LOL! We were high school sweethearts. Started dating at age 16. Married at age 18 and started a family at age 20.  We celebrated Marty's birthday in October. He says that he's feeling his age these days. LOL! He still works 4 days a week and has a long commu...

{Mini Chocolate Pies} Good Grief-Somebody just slap me!


Well I promised in my last post that I would give you a simple, easy, mini chocolate pie recipe so here it is.....


Recipe:

1 egg
Splash of water
1 box of Pillsbury refrigerated pie crust softened as directed on package
1 box instant chocolate pudding mix
Sugar

1: Preheat oven to 350. Line cookie sheet with parchment paper.


2, Make egg wash by beating egg with just a splash of water till well blended. Set aside.


3. Mix pudding according to directions on package and place in the frig. to set for just a bit.




4. Unroll pie crust.


 5. I don't know what size my cookie cutter was but whatever size that you want to use would be fine. The bigger the cookie cutter the bigger the pie! LOL! 


6. I cut out two crusts for each pie. Then with a teaspoon I put pudding on one pie crust. Then I placed the other piece of pie crust on top. 

 Doesn't matter if the pudding oozes out just a little. (but not a lot)

7: Brush egg wash on the top and sprinkle with sugar



And pop in the oven for 12-15 minutes. Cool before serving. I think I had around 12 of these little pies with pudding left using this size cookie cutter.



Mercy, have mercy! These little things are tasty.
It's just all in a days work girls! 


You can also use other flavors of pudding. Lemon Curd would be good as well. 

And what did I do with the left over pudding????

 Topped those cuties with some graham cracker crumbs and an Oreo and well....need I say more????

BUT THEN...I decided to get on a baking kick and whipped up some strawberry cookies. Needless to say a sweet friend was a recipient of a "SWEET" treat


 And I must give a shout out for our birthday girl Kyleigh. She is 5 years old now and she is full of Class and Sass and we wouldn't have it any other way!

  7. You know whats funny is last week I saw these chocolate pies and anticipated a big long recipe and here your post is making it look so simple! I'm thinking how that roll out pie crust can store in the fridge for a long time and how easy this recipe can be whipped up in a jiffy if I keep a few boxes of pudding on hand in the cabinet!     1. LOL! These little sweets was so stinking easy to make and not time consuming at all. Recently I've made several from scratch cakes that seemed to take me all day and lot of money so decided I needed to do something simple and cheap! And...they are good for a quick little simple dessert.

Hiding the Ugly Hot Water Heater

 I shared that I wanted to hide my ugly hot water heater in my laundry room with you a few weeks ago. It just stuck out like a sore thumb. But after all it is a hot water heater right? Don't you just love sunflowers? When I think about sunflowers I think of two things. My motherinlove who loved sunflowers and Fall. I came across a devotional written by Julia Bettencourt on sunflowers and thought it so appropriate for today as I wanted to share my sunflowers with you.
