{It's Been A Hot Minute Y'all}

  Well, it's not HOT in my neck of the woods in temperature (not today anyway) but it's sure been a HOT minute since I last posted. For that I am so sorry but it seems my life has been consumed with doctor appointments, tests, and MORE tests, biopsies, surgery and so much more. One day at a time sweet Jesus is all that any of us can ask for. Wanted to pop in on this beautiful Sunday afternoon to share a little about what I've been up too.  Marty and I enjoyed a weekend at the beach before I had breast cancer surgery and took advantage of the time I had in between so many doctor appointments and testing. It was sure a good little getaway.  We celebrated our 47th wedding anniversary in September. WOW! Just babies! LOL! We were high school sweethearts. Started dating at age 16. Married at age 18 and started a family at age 20.  We celebrated Marty's birthday in October. He says that he's feeling his age these days. LOL! He still works 4 days a week and has a long commu...

{Carrot Cake Cookies with Cream Cheese Frosting and A Little Fun}

I love cookies, cream cheese and pecans so I knew I had to make these cookies.


TIP: To save time buy a bag of shredded carrots and then give them a fine chop.

I like having all my ingredients on the counter and ready to go. That's how they do it on the cooking shows you know? LOL!


Doesn't those specks of freshly chopped carrots make that dough look pretty? YES, I know, I get a little excited about things like this!

Made myself a taco salad while baking my cookies. Anything with Sour cream is good!



The Recipe I had shows the cookies with nuts surrounding the sides and not the top, which was so pretty. But, I LOVE nuts and decided to top my cookies with nuts.



I made these for a family reunion and hid back a few for myself too! I made enough cookies that I boxed up some and gave to a friend for a birthday present.

Okay, so how about a little fun today with a few questions.

1: What's your favorite meal of the day? Breakfast, Lunch or Dinner (we call it supper at my house)

2: What's your style most often when it comes to daily meals? Home cooked or Fast Food?

3:  Are you one that likes to try new foods or are you more to staying with what you know?

4: Do you like to cook with different kinds of spices or are you more of just a salt and pepper kind of gal?

My answers: 
1:  Well, through the week I would have to say lunch most often. I am not a breakfast person unless it's around 10:30-11:00 am. I am not a late evening meal eater either if I can help it.  Sometimes I just can't help it either but if that's the case I never eat heavy. I would NEVER sleep a wink on a full stomach. Usually that is just the opposite for some people!

2: Home cooked. I usually eat fast food one day a week and sometimes two but only if I have no choice. I know that sounds weird but  truth is I would rather eat my own cooking or what my man decided to grill.

3: I love trying new foods.

4: I LOVE cooking with spices and I LOVE trying out new spices.
 
I do hope that you all have a great week. I am already looking at this new recipe book I purchased using "Coke" in food and desserts. No telling what I might try next! LOL!

  1. Yes, I will pin this recipe too! I like breakfast foods but eaten later in the morning. I like to try new recipes all the time, but I scrutinize because of my food allergies.   3. Those cookies look so good. I like my evening meal the best. Light breakfast and light lunch but evening time....I need to change my way of thinking probably. LOL! I like trying new things once every now and then but not often. I eat fast foods maybe once a week if that. We like leftovers. Just give me salt and pepper and I am happy. Pretty picture of the flowers.

    1. Connie, Marty loves leftovers and I most often cook enough to have left overs. Especially on Sundays. My girls carry home food and we have it on Monday.

  4. Hi Cindy! My mom used to make a cookie a little like this one. It was a cashew cookie with white frosting. Yum! Love the hack to buy shredded carrots and then mince. What a time saver! Your salad looked really good too.
    Personally, I love breakfast. It's my favorite meal, I think about it when I go to bed! We rarely eat out, my husband is the major cook around here, and he enjoys doing it so much we almost never eat out during the week. Unfortunately, I don't have a wide palate or an adventurous spirit with food. I'm Irish, so I guess that might explain it. My husband is Italian, and he told me that when I married him, the only spices I knew were salt and pepper! I think he's right :(

    1. Ceil, the older I get the more variety of foods I like. I can remember despising things such as cooked greens, peas and butter beans and a big NO to cabbage! And try something NEW was out of the question. BOY have I changed! LOL!

  5. We call it supper at our house also! LOL That cream cheese frosting sure looks good. Have not baked a lot lately except gluten free mixes. Have tried a couple substituting gluten free flour and need to find time and energy to try more. Nancy

    1. I like a good taco salad Margie. That particular day I had planned on eating a sandwich but got up that morning with taco's on the brain! So decided a taco salad was a good in the midde! LOL!

  9. I saved that recipe. it sounds delicious!!!! I LOVE carrot cake and will end up making these with my grandgirls.
    I love a late lunch and usually do that at home.
    I do love to go out to dinner but we don't do that much anymore since hubby's surgery-he isn't really able to eat out.
    I cook all the old tried and trued recipes and I do use several spices when I cook---but I don't like anything too spicy..if that makes sense.

    1. Yes it makes perfect sense Diana. I used to love HOT spices and still do as long as they are not a FIRE spice. However, hot spices do not like me and I learned the hard way years ago when I began to suffer with GERD and acid reflux. It took me several years to learn ways to control it.

    1. I do like breakfast food but rather have it later on as a brunch. My husband's eye balls can pop open and he could eat a full course breakfast! LOL!

  11. Ooooh, carrot cake anything is my most favorite! I will be trying these! To answer your questions....1. My favorite meal is dinner because I get to make and eat what I like. The boys get what they want. Yup, making two meals a night! 2. Definitely home cooked unless I have a migraine, exhausted, etc. My hubby is very good about just ordering a pizza when I am not up to making dinner. 3. I am always trying new foods and recipes. It creates a lot of new favorites and a lot of fails! 4. I love cooking with a variety of spices and would love to try new ones if I new anything about them! Thanks for the recipe!!

    1. Ann Marie, I bought a new spice that I will try out and will let you know how it goes. I like pizza too. Every now and then I will buy a pizza. My husband rather not eat it but he will if he thinks that's all we are going to have. LOL!

  12. Oh, yummy! I can only imagine how many calories are in one of those sweet treats! We probably eat out too much, but mostly on weekends and maybe once a week. I'm not a good cook and Jack won't even try casseroles or anything like that, so it's strictly meat and taters, beans, etc. Boring... and is partly why we're both overweight! Boo! I'm too old for spicy foods, too... Mercy, I'm in bad shape every way you look at it! 😃

Supper is my favorite meal since I/we spend a bit more time preparing it and we get to sit, relax and visit about our day. I prefer home cooking (since I've learned to cook better!!).     1. OOH, I would love to try an Ethiopian dish. I saw some recipes recently called Indian cooking. I may have to give one of those recipes a try. I have always wanted to have a party that different types of culture foods was made along with different desserts. But needless to say, all I done was think about it! LOL!

  15. Oh my..these cookies have to be scrumptious!! Since watching all the cooks/chefs on The Food Network use cute little bowls for all their ingredients I've been doing the same!!     1. Don't you just love the little bowls Miss Mary. I am crazy about dishes as you know so I have to really stay on myself about picking up these little dishes. I saw some of the cutest little bowls over the weekend and came within an ace of buying them. I kept saying, I need those for my cooking ingredients! LOL! I actually left without them.   19. Hi Cindy, those cookies look so good! Hubby is diabetic now so we are looking for low sugar options. I enjoy all meals! I eat an egg everyday for breakfast. I have it with an English muffin or corn tortilla. We eat most meals at home now since we have better control of salt and sugar intake. We go out about 1-2 times a week. We love Mexican food but the chips get us every time. We do like to try new foods. I think my favorite spice is cumin. Congratulations on the baby to come! I added lots of pictures from Disneyland at my blog. The high here was 104 and I hope this is the last heatwave here. Poor Dodgers will be playing in the heat. Los Angeles is about 45 minutes away from us. Time to turn the World Series station on. Have a great week!

    I love lunch or as my grandmother and mother called it, Dinner. Dinner is supper like you said. haha!! It's a southern thing.
    I love to fix home cooked meals best but we pick up fast food at times when pressed for time during a big project etc.

  21. Well, you already know, Sister friend, that I don't need anyone to talk me into enjoying some of the Lord's beauty around me on any given day...I would rather do that than anything else! The carrot cake cookies look AMAZING! You look like you are very neat baker...my kitchen is mess when I am done! Here are my answers:

  23. Those carrot cookies look so amazing, and I like your tip about chopping the presliced ones. And that taco salad - yes please! About your questions... I love lunch, it is my favorite time of day to eat as well, don't like going to bed on a miserably full stomach! And I love trying new foods, new spices, and new tastes although my family is not so adventurous, lol. We almost never eat out! My family prefers homecooked meals the best, and I do too.   27. Those cookies look wonderful! And I love a good taco salad. Breakfast is my favorite meal - always has been. We do a combination of home-cooked and fast food or eating out meals. Right now we have so much going on as we prepare my dear, little mother's home for sale and cooking meals has to be very intentional and planned and prepped early in the day so that's not happening all the time. Take out is becoming a 'norm' for a couple of weeks. I always say I'm going to try something new but I really like what I like. It's so easy, especially in a busy schedule, to stick with the tried-and-true. I try new spices occasionally but I'm not as adventurous as I could be. You've inspired me to think outside the box once in a while - when life slows a bit.

Hiding the Ugly Hot Water Heater

 I shared that I wanted to hide my ugly hot water heater in my laundry room with you a few weeks ago. It just stuck out like a sore thumb. But after all it is a hot water heater right? So my man took a piece of wood (not real wood) but it worked and built a frame for me. So now to see if it would fit and it did. Don't you just love sunflowers? When I think about sunflowers I think of two things. My motherinlove who loved sunflowers and Fall. I came across a devotional written by Julia Bettencourt on sunflowers and thought it so appropriate for today as I wanted to share my sunflowers with you.
