{March is well under way}

February days are now gone and March has officially kicked in.   I finally purchased a new monthly focus board.  We ventured out for a day date which included a movie. I love our day dates. I will give my honest review about the movie for those interested. I wanted to see this movie as it was based on a true story. I did enjoy the movie but oh my, it was a tear jerker from the get go! It ended good but mercy! Let's just say that I am thankful that no one was sitting close enough to see my tear stained face. I am glad that I saw it but I am good for a while on sad movies, even if they do end good!   My oldest daughter, her husband and their son participated in the Spartan race which is a series of obstacle courses that challenge. They done so well. As you can see from the pictures it gets pretty muddy!  My three daughters participate each year in the Gate River Run. I love it that they do this together. They have so much support & encouragement from all the onlookers. I am just

{What happens when you clean out the frig and pantry?}



YOU MAKE SOUP!
Have you ever had just a little of this and a little of that when cleaning out your frig and pantry and you just can't stand the thoughts of throwing it away? I was raised by a grandmother that always "thanked" the Lord for the food we had because she would say, "There are people all over the world that would love to have just a little bit of what we are eating".  Then she would throw in..."It's a sin to waste food". Boy, that has stuck with me through the years.  If my granny had of had the means I can assure you she would have taken in every child that she thought might would be hungry and she would have cared for them. The biggest thing on my granny was her heart!




So I had a handful of mushrooms left over that I had sliced up after fixing several batches of stuffed mushrooms and enough spinach for maybe one small salad so decided to saute the mushrooms in butter and then added the spinach. I sat it aside. 




I had two small chicken breasts left over that my intentions was actually to make chicken salad but decided I wanted some chicken soup. Diced the chicken up and remembered that I had about two carrots left. So chopped them up and added it to my chicken with some chicken broth and seasoning and cooked til chicken was done and carrots tender.



I had two different shaped noodles and only a small amount of both so cooked them together until almost tender and added the noodles, mushrooms and spinach to my carrot and chicken stock. 


I happened to look at the milk I had left in frig which was about a cup and tossed it in for just a little extra sweet and creamy flavor. I let it simmer for a little while and by lunch time I was ready for a bowl of hearty "throw together what you have" chicken soup. 


I sprinkled a tad of Romano cheese on top and enjoyed my throw together soup! 
Granny would have been proud! No waste and good to the last bite. 
And....a cleaned out frig for sure. NOTHING left to eat so off to the grocery store I go!

What is something that you can remember your grandparents saying that has stood out in your mind over the years? Oh I have a list of things for sure tucked back in that old memory bank of mine. I actually need to sit down and write down some of the things that my grandparents have said. BUT....then I find myself saying the same things at time.

I hope that you have fond memories of your grandparents as I do.

  1. Cindy, this looks delicious! We sometimes throw together leftovers like you did or we have a do your own thing night and everybody grabs what's left that they want. It makes me feel strangely great to know that we aren't wasting groceries when we do that plus I'm proud that we skipped eating out once. ;)

    1. Stacey, we don't eat out often but then sometimes it might be cheaper if we did. (LOL!) I tend to cook everything in the house as my man would say when I am home all day and that always makes leftovers and lots of them. I will never be able to just cook for two I do not thing. The soup was very good and it does make you feel good knowing you are being wasteful. Thanks for stopping by.

  3. Temps was a little cooler this morning so that soup would be yummy for tonight. Cindy, my grandmother passed away when I was 20 years old but I can remember as a young girl some of the things that she would say. One being, "a nice fire will keep you warm but the warmth of your heart will always glow the brightest".

  5. You know how I always tell you that you are creative? You are clever too! Love this post with all the leftovers. Bet it tasted great. As a kid, we took leftovers from a casserole, leftover meatloaf, veggies and anything we could find that added moisture, topped it with cheese, heated it and called it leftover casserole. Everybody was fighting for it! And my clever mamma served it in classy tableware too! No one knew. Blessings to you Cindy.

  7. ah, yes...I was taught to never throw away food by my mother. I freeze even the smallest amt of left overs and when I get enuf to make a casserole or soup, out it all comes, a pan of cornbread and we have a great meal. My mama used to call the soup, Ice Box Soup, as it was all made from leftovers....xoxo

    1. I totally understand. Granny would take all veggies that might be left over even in the smallest amounts and pop them in the freezer. Then as you said, it all came out and went into a pot of soup. She would take left over mashed potatoes and make tater tots. Though she called them potato patties. Thanks for stopping by BJ.

  10. Delicious looking soup Cindy! We are the same around here with leftovers. Usually one night a week we do a fridge clean out and it's every man for himself. Plus it's nice to get a break from the kitchen :)

  17. Oh my friend, we are such kindred spirits! My grannies had all passed by the time I was born, but my mom said the same thing. Just yesterday I pulled out left overs and made a shepherds pie. I intentionally boiled extra potatoes for Sundays dinner so I would have left over mashed potatoes. I threw in some mushrooms that I had in the veggie bin and even a little bit of stove top from a previous meal. Your soup looks so yummy and very pretty too!

  19. Your soup looks great and it does feel good to use those leftovers in a productive way. Thanks for the reminder to do that. So often I am grabbing so quickly I don't survey what I have and think about using those little bits.We are blessed to have good food and it is good not to waste it.

  21. You know, I cook like this quite often! Seems like with just the two of us, I have such an odd selection of odds and ends in the food department.

  22. That looks good! I am afraid that I am not too good at creating delights with fridge leftovers. Oh let's see...my grandmother always said, "If a thing is worth doing, it's worth doing well." Don't always live up to that one either...as evidenced by my streaky windows. LOL!

  23. This looked delicious, Cindy! Your granny would have been proud of you. I love 'throw together soup' too. I always have some cooked chicken in the freezer but never have extra mushrooms.     1. We normally don't have extra mushrooms either (LOL) but I did this time and was so glad. Yes, my granny would be proud. I can't wait to see pictures of wedding and hear all about it. I know it was simply beautiful.

Hiding the Ugly Hot Water Heater

 I shared that I wanted to hide my ugly hot water heater in my laundry room with you a few weeks ago. It just stuck out like a sore thumb. But after all it is a hot water heater right? So my man took a piece of wood (not real wood) but it worked and built a frame for me. So now to see if it would fit and it did. I painted it white and did not like the texture it had even after two coats of white. (rule of thumb...you get what you pay for and the wood was cheap) But I wasn't going to let it whip me!  Found some contact paper at Walmart in the gray and white. Covered the front with the contact paper and loved the look. The top was covered with a piece of painted wood as well and worked perfect to place this on top... And this.... Added a clothes basket in the corner and here was the top.... Yep, no longer an eye sore to me! Went perfect with my gray walls and gray and white floor. Remember the wood tray I bought at a yard

{Another Fun Filled Weekend}

I hope you all are doing well. I am trying to wind down for the night and thought I would try and get a post out. Girls, by this time I am in my fat clothes and recliner smashing that remote control!   Marty and I kicked off our weekend by having a little fun food as I call it,  "charcuterie" style out by the pond. Of course I always fix more than we need or eat but it sure was good.  Two of our granddaughters had dance recitals over the weekend so we got to watch them perform and oh my! They were just the cutest things ever.  We were blessed to be able to see them perform. Then we celebrated a birthday for this sweet grandgirl! She was excited about being double digits . And besides all the fun from the weekend I was able to see some of my pretties in bloom.  Now to enjoy a cup of coffee.... {Happy 46th Wedding Anniversary To Us}

  Happy October everyone! I wanted to pop in today and share a few pictures. Marty and I celebrated our 46th wedding anniversary on September 23.  Oh it seems so long ago that we said "I Do". We started dating when I was 16. Married at 18 and began a family at 20. Needless to say we have surely grown up together. Praise the Lord that we are growing "Older" together.  We decided since it had been about 8-9 years since we had been to Savannah, Ga. that we would take a weekend there and just enjoy a scenic luncheon cruise.  We enjoyed walking River street and sightseeing, shopping and eating of course! It was a nice get away and perfect for us as we are simply two imperfect people that fit perfectly together.  I did spot Santa while in Savannah though! YES, I love Christmas so I had to stop at several Christmas shops! We've had outings that have kept us quite busy and we have surely been blessed to be able to attend our grands functions and our little outings toget
